South Beach Diet Day 19 - Recipes
Today's South Beach Diet Tips:

And now, here are the details of my 19th day on the South Beach Diet...
What I Weighed Today: 195 lbs. (8am)
I did it again. I cooked. I found a cold soup recipe on the South Beach website and I made it this morning. It turned out pretty good but there are a couple of things I would do different next time. I think that I will add a little Splenda to have more of a sweet curry soup. It came out a little flat, but it was still quite good. Right before you serve it you put a dollop of non-fat yogurt on top and fresh chopped basil. I felt so…continental!
It was an extremely stressful day today. My boss finally decided to acknowledge what I have been telling her for months, that we have no money to run the organization. My frustration is that if she had listened to me 6 months ago I could have shaved costs in a way that would have kept us flush till the end of the year. Now we don’t know what we are going to do.
She wants me to pat her on the back because she is now listening, but I am so angry I could just shake the sh*t out of her. She was in rare form today, and by the end of the day I was practically in tears - I was so angry and upset. Finally one of the other women I work with said, “We need a drink!” Amen and pass the olives!
I knew I would have to be food careful so I picked a place that I knew had good lean protein sources and great salads. They also have awesome dirty martinis but that is beside the point.
What I Ate Today:
Breakfast: Non-Fat Sugar-Free Vanilla Latte, Fried Egg
Lunch: Creamy Curry Summer Squash Soup
Snack: 3 oz Low-Fat String Cheese
Dinner: Dirty Martini, Sautéed Mushrooms, Sautéed Salmon w/Almond slices, Jicama and Cucumber Salad, 2 oz Low-Fat String Cheese
I had the waiter bring me sautéed mushrooms at the same time as the bread basket was brought to the table so I wouldn't be tempted. Then I had the most delicious piece of salmon and a jicama cucumber salad that was to die for.
I only drank half the martini because without the aid of sticky, starchy carbs, the drink was going straight to my head. When I realized my lips were numb, I knew it was time to put down the drink.
My meal was awesome and satisfying. When they brought my dinner partner her dessert, which turned out to be a giant cookie with ice cream that was definitely meant to be shared, I was able to say no without feeling deprived.
I was also just buzzed enough to forget the troubles of my day.
