South Beach Diet Day 1 - Cooking Marathon

Today's South Beach Diet Tips:

* Aspiring South Beachers need to prepare themselves for the massive amount of cooking involved.

* Motivation is easy when you’re 1 minute into a diet.

And now, here are the details of my 1st day on the South Beach Diet...

What I Weighed Today: 199 lbs. (8am)

EXERCISE:

Believe it or not, I was really jazzed today to start the South Beach diet. Thankfully, the food I ate didn't disappoint.

What I Ate Today:
Breakfast: 1 oz Low-Fat String Cheese, 1 South Beach Chocolate Peanut Butter crispy meal bar, 2 cups Coffee w/4 tablespoons Sugar-Free Vanilla creamer
Lunch: 1 can Tuna, 4 cups Spinach, 3 tablespoons Girard’s Light Champagne Dressing
Snack: 1 Non-Fat Yogurt, 5 cups Celery
Dinner: 3 Turkey Spinach Rollups w/Low-Fat Cheddar, 1 oz Low-Fat String Cheese
Snack: 1 Non-Fat Yogurt

The food I had today was yummy and just my type of thing. Didn’t have time for fancy cooking so I grabbed a bag of spinach, bottle of low-fat dressing, and a can of tuna for lunch. Voila, Naked Nicoise Salad!! Then on my way to work out this evening, I took sliced turkey and rolled it around spinach, Dijon mustard and low-fat cheddar cheese. Voila...I don’t have a cute, catchy name for these (sorry).

After eating, I was full and felt energetic and satisfied. The eating part is all good. Yay!!

The potential problem with this diet isn't going to be the eating, but the cooking. I’m already getting a little nervous about the time this diet takes for food preparation -- recipes, shopping, cooking, cleaning pots and pans. I really need to get in there and stay motivated about making the recipes but I can already feel my resolve waning--and it’s the first day!

I am going to do some checking around on the Internet to see if I can find a place that sells or ships South Beach frozen entrées or pizzas. I think it will make being on this diet a little easier for me. In the meantime, I can sharpen up my chef skills now that I've bought all these ingredients.

YUM! I love this. The taste is pretty much like most nutrition bars but there is no aftertaste. It goes really well with coffee and is sweet enough to feel like you are cheating. 12 grams of protein in this puppy!
