Fruit Topping for Cheesecake
1 pint fresh or frozen berries (blueberries, strawberries, raspberries, blackberries) 1/4 cup Splenda 1/8 teaspoon Guar Gum (you could probably use 1 or 2 teaspoons of cornstarch instead, but that would add about 3 grams of carbs.)
- Rinse and sort fruit.
- Transfer to a non-stick saucepan.
- Stir Splenda and Guar gum together, and then add to fruit.
- Do not add water...the water from rinsing is all you need.
- Cook over low heat uncovered for 10-15 minutes, stirring occassionally until sauce is thickened and fruit has cooked down a bit.
- Remove from heat and transfer to another bowl and cool to room temperature.
- Store in refrigerator.
