Fruit Topping for Cheesecake

1 pint fresh or frozen berries (blueberries, strawberries, raspberries, blackberries)
1/4 cup Splenda
1/8 teaspoon Guar Gum (you could probably use 1 or 2 teaspoons of cornstarch instead, but that would add about 3 grams of carbs.)

  1. Rinse and sort fruit.
  2. Transfer to a non-stick saucepan.
  3. Stir Splenda and Guar gum together, and then add to fruit.
  4. Do not add water...the water from rinsing is all you need.
  5. Cook over low heat uncovered for 10-15 minutes, stirring occassionally until sauce is thickened and fruit has cooked down a bit.
  6. Remove from heat and transfer to another bowl and cool to room temperature.
  7. Store in refrigerator.
